Fun: Good Times

This is how my week has gone since Wednesday:
I packed a couple of suitcases and
Sent my children off to spend time with The Grandpat aka My Dad : )
 Since I had free time, I was able to thrift with my buddy Nina,

Hangout without interruption with my best friend aka the hubby at coffee shops. Which means NO Backwash into my yummy drinks!

 Everyone say HELLO to my Soy Green Tea Latte :)


We attended the grand opening of H&M together. Not early enough to stand in line in 97 degree weather but just in time for hubby to snag some cute stuff. Can you believe I bought absolutely NOTHING???
We watched the 911 Reporters perform!

Finally ate at Red Robin...Yumm :)
I tore this poor Whiskey River Burger (substituted a Boca patty of course) UP!!!


And finished up with a nice long stare at the man I adore :)
All of this fun crammed into less than 48 hours. Now Im heading off with the hubby to live it up in our last 24 hours of childlessness :)

Although my family is vegetarian, its pretty hard to get all your nutrients/vitamins in . We juice because its good for you but also because believe it or not veggies and fruit are pretty tasty.
Even our 3 year old loves the juice and shes pretty picky about what she will eat. Here are the mix/combos that we had today.
Hubby Mix:
Celery 
Carrot
Zucchini
Apples
Ginger
Romaine Lettuce

Micah Mix: (My 7 year old)
Carrot 
Apple 
Celery

Pear

Corrin Mix:(My 3 year old)

Around The House: Black Friday Aquisitions + Banana Bread

This past Black Friday while most people headed to malls and other stores to find great deals, hubby, the kiddos and I piled into the Prius and headed to the thrift stores. I cant stand being in crowded stores so thrifting was the best idea.

She needs a bit of work but Im in LOVE!!!

OMGOODNESSSSSS!!!!
Thats how I felt when hubby spotted this table and chairs set at a thrift store for a mere $75! By now you all know that hubby and I are diehard MidCentury Modern Fans. Things like this arent very abundant in Alabama.
I also picked up these pretties. $3 for the pair!!!

Having this table inspired me to bake some banana bread :)
3 ripe bananas
1c. sugar
1 stick margarine or butter
2eggs
1tbsp milk
1tsp cinnamon
2c. flour
1tsp baking powder
1tsp baking soda
1tsp salt
Preheat your oven to 325 degrees.
Butter your loaf pan.
Cream butter, sugar and eggs.
In a seperate bowl, combine dry ingredients.
Mash bananas (great kid job) and add to wet ingredients.
Combine all ingredients.
Pour into loaf pan.
Bake for 1 hour 10 minutes.
Remove from oven and let cool.
Slice and serve with butter, honey or apple butter!
YUMMY!!!
Eat at new (old) Table!!!!!

Eats: Hasselback Potatoes


 Do you have a Pinterest account?  Not a day goes by that I dont head over and pin pin pin away. Recently I realized I was pinning and not using the ideas I found there. Home, meals, fashion, ect ideas that pique my interest but that was just it.

To remedy that, I prepared these potatoes based on a recipe I pinned a week or so ago. Let me just say they taste waaaaaayyyyy better in my mouth that they did in my imagination :) You can find the recipe here.

I got homemaker fever when I saw this bread recipe...It took about 1 hour from start to finish! While I was waiting on the bread to bake, I juiced some apples, ginger and carrots. Tasty!

Eats: Blended Chocolate Iced Coffee



Sometimes I just wanna make a quick Starbucks run and grab a nice iced anything. Most times thats practically impossible being that its not really a necessity and who wants to pay $5 bucks whenever the coffee spirit moves them...NOT ME! So I came up with this quick pick me up recipe that makes me happy and gives me my coffee without having to drop everything Im doing.



You will need: 
Coffee
Ice
Pudding Cup(I chose chocolate)
Sweetener

  • Place all ingredients into your blender (I used a magic bullet)
  • Blend until ice has been throughly crushed
  • Pour and Enjoy!
BTW if you have a little one that would like to play grownup and sip a drink along with you just omit the coffee and add a bit of milk or creamer.

Eats: Sushi





This is what we had for dinner last night...Sushi!!!!! Well I suppose its sushi. Theres no fish but it is delicious. Bunni taught me how to make it a couple months ago and I cant stop. I think we've had it at least 15 times since Ive learned how to do it on my own. So simple!!! Thanks Bunni :)


Sushi(Maki) Rolls a la Bunni
Seaweed Wrappers
Sushi Rice
Mango
Avacado
Tofu( Marinaded, fried and sauced)

  • Lay Seaweed Wrapper shiny side down
  • Spread Rice
  • lay tofu, mango and avacado at one end of wrapper
  • roll tightly
  • Slice
  • ENJOY!!!


Serve with wasabi, ginger, soy sauce ect...Get creative :)

Eats: Ohpabo!

This is Miss. Corrin. Her favorite breakfast is Apple Raisin Cinnamon Oatmeal, or Ohpabo (Oatmeal-Bowl) as she calls it. She requested it so we ate it this morning :)




2 Cups Water
1 Cup Old Fashioned Oats
Raisins (as much or little as you like)
1 Apple diced
A pinch of salt
A splash of Vanilla Extract
Cinnamon (as much as you like)
1 tbsp Margarine (or butter)
Brown Sugar or Maple Syrup

  • Put water, raisins, salt, vanilla, cinnamon in a small saucepan and bring to boil.
  • Once boiling, add oats and diced apple.
  • Turn heat to medium low.
  • Let cook for approximately 5-7 minutes.
  • Add margarine and remove from heat.
  • Sweeten to taste with sugar or maple syrup.
  • Enjoy!

Random: This Weekend I....

Got Lots of much needed rest...
 Hubby and the Kiddos served me breakfast in bed :)
 I found fresh cauliflower on sale for .99 cent a head!!!

 I added a drizzle of olive oil + a sprinkle of salt and pepper. Placed in the oven @400 degrees for 20 minutes... 
 Yummy Oven Roasted Cauliflower!!!
Hubby and I also had lots of pictures developed and he created this collage on our hallway wall of the people we love :)

Eats: Teriyaki Tofu Burger


This past weekend was pretty busy. I was running here and there but never stopped in the grocery store to stock up for the week. So today when Hubby came home from work starving I had to put on my thinking cap and use what we had on hand.

Teriyaki Tofu Burger

Extra Firm Tofu (sliced 8-10 pieces)
Soy Sauce
Onion Powder
Garlic Powder
Cracked Black Pepper
Oil (for frying)

Dry off sliced tofu on paper towel. Lay your slices on a plate. Pour a mixture of Soy, onion, garlic and pepper over your slices and allow to marinate for a few minutes while your oil gets hot (you can marinate overnight if you wish). Once oil is ready fry tofu for aprox. 3 minutes per side. Drain fried tofu on paper towels to remove excess oil. Brush on Teriyaki Sauce and youre done :)

I topped our sandwiches with Onion Rings, Pickles and Sprouts!

Eats: Melon-choly

 Its a bittersweet time of year for me. Why? Well although I loathe hot weather, every year I cannot wait for watermelon season. Unfortunately its come to an end. This is our last melon of 2011 *sigh*

 To lighten the blow I chose to surprise the kids with a yellow melon. There were looks of confusion and disgust when it was cut open. Needless to say it took some coaxing but they tried it....

Watermelons will be missed around here this Fall/Winter but when the season comes again we will be super prepared to devour more of this watery goodness
